If you’re a busy mum and just can’t be bothered cooking (we’ve all been there 😅), these are my go-to lazy, healthy meals that take minimal effort but still taste amazing!
In this video I’m sharing 3 easy family dinners:
🍛 Chicken curry traybake
🍝 Creamy salmon pasta
🍲 Slow cooker curry lasagne
All of these are:

✔️ Family-friendly
✔️ Healthy & filling
✔️ Perfect for busy weeknights
These are the kinds of meals I make when life is chaotic but I still want something homemade without spending hours in the kitchen.

Ingredients by Meal

🍛 Chicken Curry Traybake (Serves 4)
500g chicken
200g basmati rice
1 red pepper, chopped
2 tbsp crème fraîche
2 tsp garam masala
2 tsp curry paste
1 tbsp ginger & garlic paste
500ml chicken stock

🍝 Salmon Pasta Traybake (Serves 2)
2 salmon fillets
130g pasta
3 Laughing Cow triangles
Handful of cherry tomatoes
Handful of spinach
1 tsp ginger granules
1 tsp mixed herbs

🍲 Slow Cooker Chicken Curry Lasagne (Serves 4)
450g chicken thighs
1 carton passata
3 tbsp curry paste
1 onion, chopped
2 peppers, chopped
2 tsp curry powder
1 tsp garlic granules
½ tsp ginger powder
1 tsp mixed herbs
1 chicken stock cube
3 tbsp fat-free yoghurt
6 lasagne sheets
Handful grated mozzarella

Breakfast Protein bagel + 1 egg + ½ avocado 344 cals - 0 syns - 2x healthy extras
Lunch 2 chicken skewers + ½ plate salad + 1 tsp 70% lighter salad cream 230 cals - 3 syns
Dinner Lasagne soup (1/4 of recipe) 445 cals - 0 syns
Snack 1 Carrots & red peppers 45
Snack 2 Proper Popcorn (plain) 65
Total calories - 1126

Ingredients for Lasagne Soup - recipe in Meal Prep Video: https://youtu.be/KyKYbzvhkmc
served 4 - ingredients list:
500g lean mince, 2 onions, 1 pepper, 1 courgette, 1 carrot, 2 garlic cloves, 1 tbsp tomato puree, Salt & pepper, 1 tsp each of garlic powder, oregano and thyme passata 1.5 litre beef stock, 200g lasagne sheets, handful of spinach

Fry mince for 5 minutes then remove to one side. Fry onion and carrots for 5 minutes, add peppers, courgettes and garlic for 5 minutes, add tomato puree, herbs, passata and stock, simmer for 10-15 minutes, break up lasagne sheets and cook for 10-15 minutes. Add the spinach for the last 5 minutes. Season as necessary. Store in the fridge for 3 days or eat straight away.
